Looking to eat healthier this year? A new cookbook from SIU may help.

Healthy SIU Food, Fitness & Wellness Cookbook has 102 recipes for everything from breads to desserts, all with complete nutrient counts.

“It’s an all-purpose book. It’s for people with diabetes, for those trying to lose weight, for those trying to eat healthier and for those watching their sodium,” said Sara Lopinski, the book’s author and a registered dietitian with SIU HealthCare.

“Eating healthy doesn’t have to be complicated. The recipes are easy to make and use common, on-your-kitchen-shelf ingredients,” she added.

The cookbook also will serve as a textbook for SIU’s “Healthy U” nutrition classes that start next month.
